Green Eggs and Ham

Yesterday we went to the Boaz Library for story time. They were celebrating Dr Suess. We have a few of his books but Sophie Clare is not really into them yet. When we got there, Sophie Clare was playing the "shy" card and would not even walk. Finally she warmed up a bit and worked on her cat hat.

She listened more yesterday than usual plus they had a suprise coming.............

It was The Cat In The Hat!!!  Sophie Clare was very intrigued.  I wanted to get her picture made with it but there were tons of kids all around. She could not get over the cat having on tennis shoes. ;-)

She did not want to wear her hat yesterday but has been all about it today!

Bad Boo Boo's

Welcome back Monday!
It is another beautiful day outside!
We have come in for a nap and for me to work out which I am done with.

We had a pretty good weekend. 
 Nothing to exciting........Friday night, we just hung around the house. Saturday Jamie got our taxes done and took a much needed fence down.  Our plans were to plant some trees but we ended up cutting yard work short. We went to Gadsden for a bit and ate at Struts. Yesterday, we went to church and came home to get ready for Farrah's birthday party. Here is Sophie Clare before the party. She was super excited.
We went to my moms and walked to my Aunt and Uncle's house.  As Sophie Clare was going up the steps, she scraped and hit her leg. Bless her sweet heart, she cried, cried and cried some more. She wanted to go home, so we did for about an hour. She got to feeling some better and we went back to the party. She would not walk at all. I just knew that this was "hurt knees" all over again. Last night she took about 3 steps and that was it. This morning she still had no intentions of walking. I know she was not hurting, she was just seeing how long she could milk it. haha After some craft time, she was ready to go to her room to play. I told her if she wanted to go to her room she had to walk. She tip toed while holding on to my hand.

A Little Bit Of Jesus Loves Me

I Love Sophie Clare's personality. She is full of life around the house but when she gets around others, she tends to be shy. I have tons of videos on my phone and I finally figured out today how to get them off.  It was not as hard as I made it out to be. My blog friends Jamie and Sarah really got me motivated to do this. Thanks ladies! :-)

Jamie and I had to stop by church a while back and Sophie Clare loves to get the microphones and sing. So I asked her to let me video tape and she was very cooperative.
Sorry the video is sideways. Apparently it was how I was holding my phone.

I hope you all are having a great Saturday.  We are not up to much but playing in the house. The wind is a little cool and we are hoping it is going to warm up a little bit more. Jamie is going to plant a few things, get taxes done........you know the fun stuff.  :-)  
We went to the Cupboard this week for lunch and took a qick photo shoot in a near by alley.

Coconut chicken


I am always looking for new recipes and ALL RECIPES came to my rescue again.

COCONUT CHICKEN
Ingredients
1 (14 ounce) can coconut milk, divided
1 clove garlic, minced
1 tablespoon soy sauce
1 tablespoon lime juice
 1 1/2 pounds skinless,
 boneless chicken breast halves, cut into strips
 1 cup sweetened shredded coconut
1 cup panko bread crumbs
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup all-purpose flour
1 egg, beaten
1/2 cup reduced-fat mayonnaise


Directions
Pour half the coconut milk, the garlic, soy sauce, and lime juice into a resealable plastic zipper bag, and shake to thoroughly combine the marinade. Place the chicken strips into the bag, squeeze several times to coat the chicken with marinade, and refrigerate at least 3 hours. Reserve the rest of the coconut milk.

Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and grease with olive oil.

Place the shredded coconut into a blender or food processor and pulse several times until the coconut is ground into crumbs. Mix it with panko crumbs, salt, and black pepper in a bowl. Place the flour into a second bowl, and the egg into a third shallow bowl. Shake excess marinade from chicken strips, and dip them into the flour to thoroughly coat; then dip into egg, and finally into the coconut crumb mixture. Place the coated strips onto the prepared baking sheet.

Bake the chicken strips in the preheated oven until golden brown, about 30 minutes.

Mix the reserved coconut milk and mayonnaise in a small saucepan, and bring to a simmer over medium-low heat; serve the sauce drizzled over the chicken strips or on the side for dipping.



It was very yummy although I did not love the sauce because of all the mayo! Next time, I think I am going to make a sweeter cream sauce .

Working Out Continues

Each week I am trying to do more reps. Although most days my legs feel like jello.
My lower stomach is still having issues and I hope to be on the up side with my big ole excerise ball!

Mardi Gras Story Time

Spring time in February!
 The weather here has been fabulous today! It was so pretty and warm. 
Sophie Clare even woke up and said the sun is shining. :-) 
We got a little house work done and headed outside. 
She rode her tricyle, we played in the sand, walked, played with the rabbit, wrote with sidewalk chalk,  bubbles, flew a kite.................we had such a fun day! 
I am so thankful to spend so much time with her! She is such a blessing!


We did not go to our usual Gadsden story time this week! We decided to head to Boaz to see what was taking place. We used to go there all the time then took a break and headed to Gadsden. Sophie Clare was excited about trying a new spot. I don't believe she remembered going in the past.
 On Tuesday they were celebrating Mardi Gras.
Sophie Clare made her self right at home.................
as did cowboy Luke.

They made fun mask before singing and the story.
 We added some lashes for a girly look!



They made a cute little jester hat, got some beads and ate cake.

I love how all the kiddos have there mask and hat on except for Sophie Clare.


When we got home she was broke out with a rash...........WHY?? Well it could have been because she had been sick with a fever and ear infection but I am beginning to thing it was the beads. I couple of doses of benadryl, she was fine!
Some of you may know that my computer has not been working and apparently had a mind of its own! Thankfully after a little unplugging here and there, it is much better. The strange thing is, it was only "new post" that was not working!

Singing From The Heart

How was your weekend?
Ours was low key once again. Friday, I cooked. Saturday we went at get paint for the dining room! YAY We picked out a fabulous shade of gray! I am so looking forward to saying good bye to the red! The girls were at my moms so of course we played with them. Sophie Clare is still not feeling the greatest. She ran a fever Friday night and was not her perky self on Saturday. Last night, I rocked her to sleep and tried to lay her down 2 differnt times. Needless to say she started crying and I had a feeling it was her ears. I put some numbing in them and she ended up sleeping on my chest for about 4 hours. Now we used to do that all the time but it is a litttle differnet now that she weighs 30 lbs. Although if she was 10 and wanted to sleep on my chest, I would let her.

Even though she has not been herself, she still has energy for music time.
She LOVES to sing and sings from her sweet soul.

Heart Strings

We celebrated Valentine's Day at the library on Thrusday. What was the story about?? Well, I think it was about raining hearts. Sophie Clare was not really into sitting still. Although, she never really pays that close of attention at least she sits still.
We had a special suprise.......Aunt Annie and Gracie!
The girls were so cute as was Max!
They made cute little heart strings out of toliet paper rolls.

After that you will never guess where we went to eat?????

My Sweet Valentine!


I would say Happy Wednesday but its  about about 9 mins aways from being  Thursday. :-)
By the time I actually get finish, it will be Thursday so
 HAPPY THURSDAY!  My Wednesday did not go quiet as planned. I thought I was going to do my grocery shopping and then SC was complaining with her ear. Last week was such an up and down week that I did not give her meds like I should.
 I know, mom of the year!! 
Anyways, ear drops and to finish up meds. We are on the road to recovery! ;-) 


So let's back it up a bit to Tuesday.........
VALENTINE'S DAY!!  
We woke up and were excited that we were meeting some very special friends for a Valentine breakfast at Chick- fil- a.

Chick-fil-a was truly celebrating Valentine's day with flowers and heart shaped biscuits.


When we finished playing, we rushed in Hobby Lobby and GW really quick. Why were we in such a hurry??  We had to get to Sr lunch at church of course. They have the best food ever! We have some Amazing cooks!!  A couple of the ladies made a heart shaped cake!
They were delish!

When we got home, we had have wonderful surprise on our door. Sweet Luke had left her a Valentine and she was super excited.

She was not really into taking a nap but after a couple of tries, she was out! When she woke up, I could not wait to give SC her Valentine!
 I told her to close her eyes and wait for her surprise!

We got her way to much but when she is the one and only it is so hard, 



She loved all her goodies! After her bath, we put on her Valentine pj's and got busy in her workbooks.
