Cucumber Salad

We have a local restaurant that we love,
The Courtyard.
They serve the best Cucumber Salad in the Summer and I was dying to make some. So today, I searched on my favorite site.......
ALL RECIPES
 and found this yummy recipe. There were lots to choose from but this is what I ingredients for.

Ingredients


2 medium tomatoes, sliced and quartered
1 large cucumber, peeled and sliced
4 green onions, chopped
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon pepper
1/3 cup cider vinegar
1 cup water

Directions

1.In a bowl, combine the tomatoes, cucumber and onions. In a small bowl, combine the sugar, salt and pepper. Whisk in the vinegar and water. Pour over vegetables and toss to coat. Cover and refrigerate for 4 hours or overnight. Serve with a slotted spoon.


Things I did different..................
 
Used white vinegar instead of cider
Used a bit more sugar
Did not add water
 
It taste so yummy and so cool.  I can't wait to eat it with some fried green tomato's!
