Loaded Potatoes and Chicken Skillet

My blog friend, Sarah has been doing "Monday Meal Plans" for a while. Most of the time I just don't have the time to sit and read. I do look at the pics and think "hey, that looks good".  On Sunday afternoon, I took time to search through a few and picked out some goods I think!!

Loaded Potatoes and Chicken Skillet
Tasty Kitchen

Ingredients

 •4 whole Strips Bacon
•3 whole Medium Potatoes, Cubed
•2 whole Boneless Chicken Breasts, Cubed
•1 Tablespoon Olive Oil
•1 whole Small Onion, Diced
•1 cup Diced Red And/or Green Bell Peppers
•4 ounces, weight Monterey Jack Cheese
•Seasoned Salt And Pepper, to taste

I used real bacon bits instead of cooking bacon.
I used onion flakes instead of a real onion.
Preparation Instructions
Cook bacon and set aside. Bring a pot of water to boil, add potatoes and boil for 5-8 minutes or until potatoes are softened.

In a large skillet, cook chicken; drain any leftover fat or oils. Return skillet to the stove and heat olive oil in it over medium high heat. Add onions and bell peppers, cook for 3 minutes. Add potatoes to the skillet and cook for another 3-5 minutes or until potatoes are slightly browned. Add chicken to the skillet, top with cheese and bacon, cover and cook until cheese is melted.


Jamie gives it a 1 1/2 thumbs up............WHY?? 
Only because of the bell pepper!

I didn't read the top of your post at first, and almost commented "Hey I have made that before!" Haha! We actually only gave it 1 and 1/2 thumbs up as well. Pretty good, but not one of our all time favorites. Hope you were able to find some good recipes to try!
