White Chili

Good Morning!!
Sophie Clare and I are up way to early this morning!! She did not go to bed till 10:30 last night because of her late nap at church. I was sure that she would sleep late because she went to bed so late. I bet she takes an early nap!!

I love Winter.........foods that is, there are so many yummy soups to make!! I shared this recipe with Allison (a girl I work with) and I know my sis had been wanting it!!

WHITE CHILI
1 can great northern beans drained and rinsed
1 can condensed cream of chicken soup, undiluted
2/3 cup milk
1/2 teaspoon ground cumin
1 cup diced cooked chicken
I always add a little garlic and onion powder for some added flavor.
Stir in beans, soup, milk, cumin, garlic and onion. Bring to a boil. Reduce heat; simmer uncovered for about 20 min. Stir in chicken; heat through.
Garnish with Monterey Jack Cheese.
This only serves to but for more just double!!!

Yesterday, I just had to get out of the house. So, we headed to the thrift stores. I found Sophie Clare some really cute books but that was about it. We also went and got my nails done. I thought she was going to sleep while they did them but she woke up the min. we got there. Since they were not busy, I thought I would try it. Sophie Clare was GREAT!! She sat in my lap for a long time and just watched. Then I let her down and she just walked around!! I was so proud of her.

Sophie Clare is so adorable. Wish I could hug and squeeze that sweet baby. OOohhh that white chile sounds delish. Very easy and perfect for a single person. I will give it a try this weekend.
